Preparation

  1. Cut the pineapple into small pieces.

  2. Scoop out the avocado flesh with a teaspoon.

  3. Place the avocado and pineapple pieces in a blender, then add the other ingredients (lemon juice, sliced almonds, maple syrup, soy yogurt). Blend everything until you get a creamy drink.

  4. Serve in glasses and garnish with one or two mint leaves.

Soy yoghurt can be replaced by 500 ml of plant milk.

Avocado tends to thicken the smoothie; add a little water if you want it more liquid.

🧊   Conservation

In the fridge: the smoothie can be stored in an airtight bottle or jar for up to 24 hours. As avocados oxidize quickly, the color may darken slightly, but this does not alter the taste. To slow down oxidation, you can add a little lemon juice to your preparation.

Stir well before serving: If the smoothie has been sitting for a while, it may go out of phase. Shake or stir well before drinking.

Freezing: You can also freeze the smoothie in individual portions (in ice cube trays or small jars). It will keep for up to 2 months in the freezer. To consume, leave to thaw in the fridge, or blend again to obtain a smooth texture.

If you want to prepare this smoothie in advance, you can also freeze the pineapple and avocado chunks in portions, then blend them just before serving!
