Energy balls - dates, almonds
Description
Energy balls are mixes of lots of good things and are great for breakfast, snacks, or afternoon treats. What's great about energy balls is that they are delicious, easy to prepare, and offer many possible combinations.

Preparation

Pit the dates and let them soak in hot water for 15 minutes if they are too firm.

Grind the almonds into small flakes in your electric blender.

Add the dates, vanilla extract, salt and shredded coconut, then continue blending.

The mixture should be crushed but easy to squeeze into a ball. If the ball crumbles, add a tablespoon of water and blend again. Do this until you find the right consistency.

If the ball is too wet and sticky, add almonds and mix.

You can use a scoop of ice cream or a tablespoon to make regular-sized balls.

You can moisten your hands to roll out portions of your mixture.

If you have sesame seeds, lightly toast them and coat your energy balls with them. You can also roll the energy balls in shredded coconut.

Once finished, refrigerate in an airtight container for 1 hour before eating.

A word about this preparation...
Cooking vegan often requires mixing and/or grinding foods. Know that buying an electric mixer or blender will quickly pay off and be useful in many recipes.
To obtain firmer energy balls, add unsweetened muesli.
You can store your energy balls for one week in the refrigerator or one month in the freezer.
They generally have a lot of success with children ;-)
