Soak the cashews in boiling water for 15 minutes to soften them. Then drain the water and rinse the cashews.

In the fridge: cashew sauce can be stored in an airtight container (a glass jar, for example) for 4 to 5 days in the fridge. It may thicken slightly over time: add a dash of water or lemon juice, then stir well before serving.
In the freezer: this sauce can be frozen. For greater convenience, divide into small portions (ice cube trays, small jars, muffin tins). It keeps for up to 3 months in the freezer. Defrost in the fridge or at room temperature, then blend or mix again if necessary to restore a smooth texture.
